Extra Virgin Olive Oil
The Harmony
 
Typology: Extra Virgin Olive Oil
Varieties: 

It is known that an olive grove with more than one variety yields oil with rich, sophisticated and nice scents. The different varieties bearing the extra virgin olive oil Terra d’Aligi are «Gentile», «Leccino», «Nebbio», «Moraiolo», «Frantoio», typical from the place of origin, the Frentani area.

Harvesting and milling: 

When the olives, directly picked from the plants, start changing their colour, from green into violet, they are brought into bins immediately to the pressing. 

Extraction: 

The pressing and the extraction are carried out in modern controlled temperature systems.

Aging: 

The oil is stored in stainless steel containers and after two or three months, during which the dregs deposit, the bottling process starts.

Style: 

Harmonic sweet oil with light bitter- peppers tones.

 

Yellow with green nuances, intense and neat aroma, fruity with wild flowers tones, the bitter, peppers


and sweet taste gives to the oil harmony and delicacy, as well as a good structure and charming persistence.
